Ready-to-eat set desserts continue to grow both in terms of the volume and value of sales.

The most popular types are:

  • Creme caramel – a cooked vanilla custard with caramel sauce
  • Creme brulee – a rich custard base with a contrasting layer of hard caramel
  • Pannacotta – a softly set and creamy Italian dessert, typically flavoured with chocolate, coffee or vanilla

These set desserts can be produced with a range of  textures from strong with brittle mouthfeel to weak gels with creamy mouthfeel.
