Cottage cheese dressing has grown in popularity not least because of its perception among the public as a health food. It is considered an ideal source of protein for those on weight loss diets because of its relatively low fat content. It is one of only a few cheese types to have originated in the US, where it is very popular.
Cottage cheese is a soft unripened cheese made by the acid coagulation of pasteurised skimmed milk with rennett. The coagulum is cut into curd pieces by knives, and cooked to firm the curd pieces and release the whey. The drained curd is then washed, creamed, salted, flavoured as required, and packed.
